Transfering Video Tape to DVD or HDD

I have a ton of beta tapes that I'm transfering.

I'm using two methods. The first is by using the Pinnacle Video Transfer box direct to an external USB2 HDD. The second is direct to DVD.

I'm just curious why the DVD transfer is so much sharper/cleaner etc over the HDD transfer? All my HDD is fuzzy and blurry as can be seen on my uploaded material.

Any answers?

Sounds like a lot of video compression is being applied to the HDD transfer, which apparently is not being applied to the DVD transfer.
