How does one do this when uploading a photo?

Use the <> at both ends instead of (). If I actually do it here, it will just show you bold text instead of how to do it.
Same for italics, only use i.

You could write your captions in a new message to the forums using the easy to use BOLD and Italics buttons on top, then cut and paste them into yur upload screen and, of course, dlete the "thread" over here.
